Its soaring ceilings, expansive windows, long flowing drapes and wispy bamboos in selected corners provide a comfortable airiness not found in most Chinese restaurants. The resplendent colour palette of silver and gold adds to its exquisite air of elegance.

Here, veteran chef Leong Chee Yeng springs wonderful surprises on customers with his modern interpretations of haute Cantonese cuisine. His rendition of the classic Peking duck has a welcome addition of marinated orange peel, served together with the crisp skin, cucumbers, spring onions and yellow bean sauce, all wrapped up in a pancake. Another of Leong’s signatures is braised egg noodles with Boston lobster – egg noodles deep-fried then steeped together with the succulently sweet crustacean in a superior lobster stock, topped with shimeji mushrooms, ginger and spring onions. Leong masterfully draws out the natural sea-fresh sweetness of the lobster and accentuates it with the delicious, collagen-rich stock.

Jade is also known for its sublime dim sum; its weekend buffet remains an ever-popular affair. Some dim sum dishes are available to order a la carte, and offerings such as the succulent steamed pork siew mai with plump abalone provide a suitable start to any meal.

The restaurant also dishes up an extensive array of wholesome soups, fresh seafood and vegetables. The ever-imaginative chef also serves daily and seasonal specials, all expertly executed.
