[dropcap size=small]T[/dropcap]his year’s World Gourmet Summit (WGS) will pair two rising culinary stars at award-winning fine dining restaurant Jaan, the launching pad for renowned chefs Julien Royer and Andre Chiang. Jaan’s chef de cuisine Kirk Westaway and Mark Moriarty, winner of the S. Pellegrino Young Chef of the World 2015, will be presenting two menus from Apr 11 to 14, as part of WGS’s Epicurean Delights. The dinner line-up includes eight courses, including Moriarty’s winning dish from the S. Pellegrino Young Chef competition, whole charred celeriac, while lunch offers five courses, with dishes such as Brittany pigeon paired with truffled barley and jus gras, a jus from rendered poultry fat.
