The best news we’ve heard about Mezza9’s new Sunday champagne brunch is that the champagnes are now served by the bottle – in an ice bucket – at your table. Diners will have a bottle of champagne (Perrier- Jouët or Ruinart) tableside at all times during their brunch. And Mezza9’s attentive waitstaff will replace the bottle when the the bubbly is finished.
In addition to free-flowing champagne, red and white wines, gin and tonics, martinis, and beers, you will now have access to the new wine-pairing stations – which is a first for any Sunday brunch experience in Singapore.
The wine-pairing stations are located next to the food stations. These wines have been hand-picked to match the respective cuisines; for example imported sakes are served at the sushi counter.
In line with Hyatt’s philosophy of “Food. Thoughtfully Sourced. Carefully Served”, the Sunday brunch will also feature more plant-based items and sustainable seafood produce, including Fine de Claire (France) and Pacific rock oysters (USA), Maine lobsters, Scottish brown crab, Spencer Gulf king prawns and more. Herbs and vegetables are also sourced through the hotel’s roof garden, or through local farmers in Singapore and Malaysia.
To elevate your brunch experience, go for the luxurious Sunday Brunch experience that comes with free-flow Ruinart Blanc de Blancs or Ruinart Rosé champagne. Add $90 per person (for four person or more) and enjoy a personalised VIP Sunday Brunch experience that includes excellent table butler service. This means the waitstaff will bring to your table platters of beautifully plated food from the different stations – from meats and seafood, Thai and Chinese to desserts and cheese.
