While a succulent Iberico pork chop smothered in a fragrant wild mushroom sauce will sate, a beautifully crafted dish of wintermelon that is deftly carved to resemble a bridge and stewed in a rich chicken broth is both a feast for the eyes and palate. A comforting bowl of thin udon with fresh catch from the sea, bathed in a thick seafood broth will warm the tummy, while a simple homestyle “sweet soup” made with red dates and white fungus will warm the soul.
Available only until Dec 31, this six-course spread is a showcase of the best in contemporary Chinese fine dining – inspired, cosmopolitan, yet with a distinct identity. It is also a showcase of the culinary prowess of the chefs. Here, each chef is a master in a special technique or style of cooking, and all ingredients – prized or humble – are expertly-executed and artfully-presented.

New chef’s specialities on top of the set menu are also available. Try the Classic Teochew Promegranate Dumpling in Thick Pumpkin Broth. Here, a succulent parcel containing Chinese ham, tofu, mushroom and bird’s nest is counterbalanced by the velvety-smoothness of pumpkin soup. In another dish, the Golden Caramelised Roast Pork, caramel is used to coat crispy yet succulent meat to whet the appetite.
