Monti affords a stunning view of Marina Bay

Putting a local spin on their signature Italian fare, Monti is serving a five- and six-course National Day menu featuring the chilli crab agnolotti with bite-size Japanese sawakani freshwater crabs tossed in the iconic spicy sauce. Vegetarian options include truffle-laced pumpkin tortelli with taleggio fondue. Best views of the fireworks are on Monti’s rooftop bar, which will be rustling up the Kampong Boy Cocktail with lemongrass, kaffir lime leaf, passion fruit, grapefruit, rum, triple sec, and tequila. A preview menu is available from August 1-8.

Nostalgia permeates Chef Emmanuel Stroobant’s nine-course menu with Singaporean-meets-French fare like a decadent satay with Japanese eel, king prawn and squid, a dressed up nasi lemak with poached Hokkaido king crab encrusted in puffed coconut rice, and a pre-dessert rojak with prawn-paste-pineapple sorbet. Other favourites like beef rendang, assam fish, and braised pork belly are also given a makeover. Dinner at this One Fullerton restaurant starts early to coincide with the National Day Parade air display, and allow ample time to savour each course before the fireworks finale.

Perched on the 43rd floor of the Ocean Financial Centre, Zafferano offers unparalleled views of the National Day festivities along with a specially crafted menu complete with wine-pairing option. The celebratory four-course set takes off with Hokkaido scallop tartare with fresh sea urchin, followed by pumpkin and potato gnocchi with Rougie duck ragout and Australian black winter truffles, and a choice of pan-fried Norwegian salmon trout or 150-day Black Angus beef tenderloin for secondi. Revellers may also purchase tickets to catch the spectacle at their Terrace Lounge.

Nestled in One Fullerton, Forlino’s floor-to-ceiling windows promise unobstructed views of the fireworks. Its National Day Dinner Semi-Buffet includes a live oyster station, and free-flowing tipples. Expect local fusion like conchiglioni pasta with soft shell chilli crab, and bak kut teh with slow-braised wagyu short rib. The kitchen is also serving an executive lunch until August 9, and a set dinner until August 8, with dishes like grilled chicken satay with chicken rice risotto, and chilli crab and lobster linguine with laksa emulsion.
