It wouldn’t be a celebratory meal without a Christmas log cake, and The St Regis’ pastry chefs have two decadent offerings to satisfy your sweet tooth. For chocolate lovers, the Signature Milk Chocolate “Texture” Yule Log combines chocolate in cream, ganache and chantilly form, with cherry ganache and hazelnut dacquoise. New this year is The St Regis Singapore Mont Blanc of chestnut vermicelli cream, vanilla chantilly cream, almond sable and almond sponge. Additionally, for the ultimate food gift this holiday season, The St Regis Christmas Hamper is packed to the brim with treats like fruit cake, maron glaces, handcrafted chocolate pralines, TWG Christmas Red Tea and a bottle of “R” de Ruinart Brut NV.
A visual treat and crowd pleaser at parties is this pretty Merry Mosaic Cakes that consists of 16 “squares” of six flavours, crowned with Christmassy decorations such as snowflakes, gingerbread men, stars and holly made of icing or chocolate. Orange Chiboust comprises frangipane layered with fragrant light mousse; Raspberry Earl Grey is a mousse-based cake layered with sponge cake; Blackcurrant is made of almond sponge cake with blackcurrant mousse; and Green Tea is made using matcha powder and layered with white chocolate mousse and almond sponge. Try the Lemon and Hazelnut Yule Log filled with zesty lemon mousse, crunchy hazelnut and praline. Or the Espresso Chest featuring a combination of dark chocolate, coffee cream, almond sponge, and spiced orange marmalade. Executive pastry chef Sebastien Cocquery-Beraud has also created a Traditional Vanilla and Chestnut Yule log – inspired by old fashioned French-style log cakes. Tuck into the soft roulade cake filled with vanilla cream, and aged rum chestnuts. There are also whimsical desserts such as the Santa’s Yule Log (gluten-free cake made of coconut dacquoise, pistachio cremeux and strawberry mousse) designed to resemble Santa’s red coat. And Santa’s Velvet Robe, a ring-shape creation with layers of red velvet cake and cream cheese, topped with a hot pink glaze and white chocolate.
Tuck into these cute Chocolate Sandwich Biscuits, which come in a range of flavours – pistachio amaretto cherry, raspberry gingerbread, mont blanc, and chocolate peppermint. If you are looking for a pretty table centerpiece, order the pretty Madeleine Croquembouche which comes in strawberry, pistachio, passionfruit, and blueberry flavours.
