[dropcap size=small]L[/dropcap]auded as the world’s cheapest Michelin-star meal, the soy-glazed chicken at one Michelin-starred Liao Fan Hong Kong Soya Sauce Chicken Rice and Noodle is indeed a steal at $2. Prices at Chef Chan Hon Meng’s Chinatown Complex hawker stall have not changed since he received the coveted award, and he is determined to keep it that way as a gesture of appreciation for his long-time supporters. Currently, 90 chickens are available for sale at the stall each day. The queue is still rather daunting and they sell out by afternoon.

In Oct 2016, Chef Chan partnered Hersing Culinary – a food and beverage company that manages Tim Ho Wan and Tsuta Ramen –and opened his first quick service Hawker Chan restaurant in Smith Street, Chinatown, the following month. So if you did not make it in time for meal at the hawker stall, you can always head down to his 80-seater air-conditioned restaurant and join the queue there (soya sauce chicken rice goes for $3.80 here), or check out his branches at Tai Seng Mall and Hersing Centre at Toa Payoh.

Alternatively, for just 10 days in June, you can savour the tender chicken served with gravy and chilli sauce, and fluffy white rice at The Fullerton Hotel. His station will be part of an extensive buffet, which includes an array of seafood, fresh sushi and sashimi, and local delights such as laksa.

 The signature soy sauce chicken from Liao Fan Hong Kong Soya Sauce Chicken Rice and Noodle will be available at Town Restaurant at The Fullerton Hotel Singapore from 1-10 June (6.30pm – 10.30pm). Chef Chan Hon Meng will be there personally on 1,2,3,8,9 and 10 June between 7-9pm. Prices from $56 (Sun-Tue), $69 (Wed-Sat).
