Hotel lobbies are not usually sources of gastronomic inspiration but, for its first Singapore offshoot Sofitel So, the French brand has opted to defy every convention.

Its signature Xperience restaurant serves up a delectable array of Asian-inspired fusion fare put together by French executive chef Anne-Cecile Degenne. Dishes are categorised according to textures and tastes: crunchy, zesty, smoky, spicy, silky, saucy and juicy. You even get to determine the portions, according to whether you are in the mood for Asian-style communal dining or no-fuss business lunches. The XL is good enough for sharing, the XM is a personal portion and XS is an appetiser-sized taster.

Ease your way into a meal with the lightly seared fish ceviche enlivened by cucumber and jalapeno, or find East-West harmony in the chipotle chilli crab soft taco or lobster and scallop risotto simmered in a wonderfully robust laksa sauce and coconut foam. The foie gras and truffle siew mai also makes headlines for all the right reasons, each pouch encasing minced smoked-duck meat mixed with foie gras, and topped with apricot, ginger and a shaving of black truffle.
