When one thinks Spanish tipples, the fruity concoction known as sangria is often the first that comes to mind. However, modern Mediterranean restaurant and tapas bar UNA at One Rochester might soon be changing that conception.
Owing to the Spanish roots of UNA’s chef Jean-Philippe Patruno, the bar is working with Spanish sherry producer Gonzalez Byass to open the first Tio Pepe Sherry Bar in Asia. Start a meal at UNA with the Vina AB, a young amontillado aged for 10 years following the traditional solera system. The dryness of this sherry, with hints of wood and almond aromas, goes well with white meats and matured cheeses.
