We’re not short of good Indian restaurants here in Singapore but a search for interpretations of well-loved classics would be in vain. That is until Saha Signature Indian Restaurant & Bar, by India’s celebrity chef Abhijit Saha opened earlier this month. The 42-seater establishment serves up Indian flavours with a modernist twist, employing techniques associated with edgy restaurants — think whipping siphons, foams and gels.
